Whether you're on team brownie or team blondie, these raspberry hazelnut chocolate chip blondies won't disappoint! They're super fudgy and moist with crispy edges, and chock-full of fresh raspberries, roasted hazelnuts, semisweet chocolate chips, and white chocolate chips!
Raspberry Hazelnut Chocolate Chip Blondies
Brownies have always been a crowd favorite but these raspberry blondies are just as amazing in my opinion! Who doesn't love fudgy and buttery desserts?
It has chocolate chips in it but it's not the main flavor, so it's perfect for Valentine's Day when you're going through chocolate overload!
What are blondies?
Blondies, also known as blond brownies, are the blond version of a brownie. Like brownies, they're fudgy (or they should be) and sweet, but instead of cocoa or chocolate the main flavors are vanilla and brown sugar.
Although I love the molasses flavor of brown sugar, I opted for light brown sugar because I wanted the flavors of the juicy raspberries and toasted hazelnuts to shine!
If you love blondies, you should also try my matcha blondies and pumpkin blondies!
How to make raspberry hazelnut blondies
Start by preheating the oven to 340°F (170°C) and line an 8 x 8 inch (20 cm) square baking pan with parchment paper. In a small bowl, combine the all-purpose flour, salt, and baking powder. In a separate bowl, combine the melted butter, sugar, whole egg, egg yolk, and vanilla.
If you're making this for someone special, whether it's your Valentine or yourself, opt for the vanilla paste instead of vanilla extract! You want whoever eating this to be seduced after one bite.
Add the dry ingredients to the wet ingredients, followed by the chopped hazelnuts, white chocolate chips, and semisweet chocolate chips, and stir until just combined. Push the blondie batter into the prepared pan, top with raspberries and extra chocolate chips, and bake it for 25 minutes, or until a toothpick inserted into the center comes out clean.
Let the blondie cool completely before taking them out of the pan. I think cutting them into 16 squares makes the perfect serving size, but I won't judge if you cut it into 9 or even 4 squares! And if you want to up the cuteness for Valentine's Day, skip the knife and use heart-shaped cookie cutters instead!
