Fudgy Double Chocolate Cookies (Gluten-Free & Dairy-Free)

These gluten-free double chocolate cookies are thick, soft, fudgy, and chewy! This easy gluten-free cookie recipe is also dairy-free!

  • 2 cups gluten-free measure for measure flour (make sure it includes xanthan gum)
  • ½ cup Dutch-processed cocoa powder
  • ¾ teaspoon fine salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • cup vegan buter, softened at room temperature
  • cup refined coconut oil, melted
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon honey
  • teaspoons vanilla extract
  • 2 cups chocolate chips
  • extra chocolate for drizzling optional
  • freeze-dried raspberries optional


  • In a bowl, sift together gluten-free measure for measure flour (I used Bob's Red Mill 1-to-1), Dutch-processed cocoa powder, black cocoa powder (mine is from King Arthur), fine salt, baking soda, and baking powder. Set aside.
  • In a large bowl, beat butter, oil, brown sugar, and granulated sugar. Add a large egg and stir until combined. Add honey and vanilla and continue to stir.
  • Add the flour mixture to the butter mixture and mix together with a wooden spoon. Add in the chocolate chips and mix until it all comes together. Cover and chill for 2 hours in the fridge.
  • When your cookie dough is almost done chilling, preheat the oven to 375°F/190°C and line a baking sheet with parchment paper.
  • Take a cookie scoop (about a heaped tablespoon size) and scoop out the cookie dough onto the parchment paper. Bake for 7-9 minutes.
  • Immediately after they come out of the oven, take a large round cookie cutter, enclose the flattened cookie and swirl it around until it forms a perfect circle. Let cookies cool for 10 minutes on the pan.
  • Optional: Drizzle on some melted chocolate and sprinkle on some freeze-dried raspberries!
