These raspberry hazelnut chocolate chip blondies are moist and full of fresh raspberries, hazelnuts, semisweet and white chocolate chips!

Ingredients

  • cups all-purpose flour
  • ½ teaspoon fine salt
  • ¼ teaspoon baking powder
  • ¾ cup unsalted butter melted
  • 1⅓ cups light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • ½ cup fresh raspberries
  • cup roasted hazelnuts halved
  • ¼ cup semisweet chocolate chips plus 1 tablespoon for the top
  • ¼ cup white chocolate chips plus 1 tablespoon for the top

Instructions

  • Preheat the oven to 340°F (170°C) and line an 8x8-inch (20cm) square baking pan with parchment paper.
  • In a small bowl, combine flour, salt, and baking powder.
  • In a large bowl, stir together the melted butter, sugar, egg, egg yolk, and vanilla. Add the dry ingredients, hazelnuts, chocolate chips, and stir until just combined.
  • Put the batter into the lined pan, top with raspberries, additional 2 tablespoons of chocolate chips, and bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan completely.
