Vegan  Pot Pie

INGREDIENTS - oil - onion, celery, carrot - fresh thyme - peas - garlic - jackfruit confit - vegetable broth - coconut milk - raw cashews - cornstarch - salt & pepper - vegan pie crust

STEP 1 Saute the onion, celery, and carrots.

STEP 2 Add the garlic, thyme, and jackfruit, then the broth.

STEP 3 Blend the coconut milk and cashews together, then add to the pot along with the peas.

STEP 4 Add the cornstarch slurry to thicken.

STEP 5 Pour into the vegan pie crust.

STEP 6 Top with second crust and bake!
