Vegan Coconut Curry

INGREDIENTS - coconut oil - cumin - coriander seeds - cloves - lemongrass - onion - salt - garlic - cayenne pepper - ginger - bay leaf - tomatoes - coconut milk - lotus root - kabocha squash - mushrooms

STEP 1 Sauté spices in the coconut oil, then add ginger and garlic.

STEP 2 Add cayenne pepper, bay leaf, tomatoes, and water, then boil.

STEP 3 In a separate pan, heat more coconut oil and cook the vegetables.

STEP 4 Remove lemongrass and bay leaf. Purée the curry and pour it back into the pot. Add coconut milk and simmer.

STEP 5 Done! Serve with rice and top with vegetables.
