Pumpkin Muffins

INGREDIENTS - flour - oat flour - salt - baking soda & powder - pumpkin pie spice - shredded coconut - shredded apples - shredded carrots - pecans - flaxseed - brown sugar - pumpkin - oil - vanilla

STEP 1 Stir together flaxseed and water and allow to thicken.

STEP 2 Combine the dry ingredients and shredded coconut.

STEP 3 Add the sugar, pumpkin, oil, and vanilla extract to the flaxseed, then fold in the carrots and apples.

STEP 4 Add in the dry ingredients.

STEP 5 Divided into a muffin tin and bake!
