Lemon Curd Cake

INGREDIENTS - vegan butter - sugar - lemon - eggs - salt - flour - cornstarch - baking soda - baking powder - mayo - dairy-free milk - vanilla - shortening - powdered sugar

STEP 1 Beat together the vegan butter, granulated sugar, salt, lemon zest. Add the eggs.

STEP 2 Stir in the lemon juice, heat, then refrigerate.

STEP 3 Whisk together the flour, cornstarch, salt, baking soda, baking powder, granulated sugar, and lemon zest. Add the softened vegan butter and work it into the flour.

STEP 4 Add the eggs, mayo, and vanilla to the dry ingredients.

STEP 5 Stir in the milk, then pour into cake pans and bake!

STEP 6 Make the lemon buttercream by beating together butter and shortening, then add the powdered sugar, salt, vanilla extract, lemon juice, and lemon zest.

STEP 7 Assemble the cake!

STEP 8 Slice and serve!
