Leche Flan

INGREDIENTS - sugar - water - eggs - evaporated coconut milk - condensed coconut milk - vanilla bean

STEP 1 Combine water and sugar and heat until golden brown.

STEP 2 In a bowl, add eggs, evaporated milk, condensed milk, and the seeds scraped out of the vanilla bean. Gently whisk together until smooth.

STEP 3 Pour the custard through a mesh sieve over the cooled caramel. Cover the round pan with foil and bake.

STEP 4 Allow the flan to cool, then slice and serve!
