Katsu Curry

INGREDIENTS - onion - carrots - garlic - yellow curry paste - coconut milk - garam marsala - bay leaves - vegetable broth - dry thyme - coconut aminos - jackfruit confit - oat flour - panko breadcrumbs - rice

STEP 1 Saute carrot, onion, and jackfruit in a large pot.

STEP 2 Add the garlic, garam masala, and thyme.

STEP 3 Add the yellow curry paste.

STEP 4 Pour in the coconut milk, broth, and bay leaves. Bring to a boil. Add the coconut aminos.

STEP 5 Dry the remaining jackfruit confit and coat with flour and breadcrumbs.

STEP 6 Fry the jackfruit, then serve with rice and the curry!
