Chocolate Carrot Cake

INGREDIENTS - roasted carrots - sugar - maple syrup - oil - GF flour - baking powder - baking soda - salt - coconut milk - cacao powder - coconut oil

STEP 1 Combine the dry ingredients.

STEP 2 Blend the carrots, sugar, maple syrup, oil and egg until smooth, then add to the dry ingredients.

STEP 3 Pour the batter into a loaf pan and bake.

STEP 4 Make the icing by simmering the coconut milk and maple syrup, then whisking in the cocoa powder.

STEP 5 Chill the icing, then drizzle over the cooled carrot cake.
