Mini Cheesecakes

INGREDIENTS - buttery cookies - butter - cream cheese - gouda - sugar - egg - vanilla - honey - lemon - cornstarch - cinnamon - roasted almonds

STEP 1 Crush the biscuits, and combine with the melted butter, then press the mixture into cupcake liners.

STEP 2 Melt the gouda, and stir in the sugar and vanilla extract. Add the egg.

STEP 3 Scoop the batter evenly over the crust, and bake.

STEP 4 In a pan, combine the honey, lemon juice, cornstarch and cinnamon. Stir in almonds, then top the chilled cheesecakes.

Delicious individual gouda cheesecakes are topped with a honey almond topping. The salty gouda and sweet honey pair beautifully and the almonds' crunch contrasts nicely with the creaminess of the cheesecakes.
