Ice Cream Sandwiches

INGREDIENTS - GF flour - cocoa powder - salt - baking powder - brown sugar - vegan butter - dairy-free milk - vanilla - condenses oat milk - oat whipping cream

STEP 1 Combine dry ingredients and set aside.

STEP 2 Beat together vegan butter and light brown sugar. Add the vanilla and beat again. Slowly add the dairy-free milk while continuing to beat.

STEP 3 Add the dry ingredients.

STEP 4 Bake the cookie mixture, then transfer to the freezer.

STEP 5 Beat the chilled oat whipping cream. Add the sweetened condensed oat milk, vanilla, and beat until smooth. Allow to chill in the freezer.

STEP 6 Cut the cookie base in half. Spread the ice cream base over half of the cookie base, then top with the second half of the chocolate cookie layer.

STEP 7 Cut into ice cream sandwiches and serve!
