Coconut Cream Pie

INGREDIENTS - vegan/GF graham crackers - unsweetened coconut - sugar - salt - vegan butter - coconut oil - coconut milk - non-dairy milk - vanilla - cornstarch - vegan whipping cream - powdered sugar - toasted coconut

STEP 1 Combine the graham cracker crumbs, desiccated coconut, sugar, and salt. Add the butter and coconut oil, and stir to combine.

STEP 2 Press the mixture into a pie pan.

STEP 3 In a pot, whisk together the cornstarch, granulated sugar, and salt. Add the non-dairy milk and whisk.

STEP 4 Whisk in the coconut milk, coconut oil, and vanilla extract and heat until thickened.

STEP 5 Add the desiccated coconut and stir.

STEP 6 Pour into the pie crust.

STEP 7 Add the chilled whipping cream and powdered sugar into a large bowl and whip until fluffy. Top the pie.

STEP 8 Top with toasted coconut and chill.
