Zucchini  Muffins

INGREDIENTS - almond flour - salt - baking soda - baking powder - cinnamon - nutmeg - cardamon - ginger - lemon zest - zucchini  - desiccated coconut - butter - eggs - brown sugar - vanilla - chocolate chips

STEP 1 Combine the dry ingredients and lemon zest.

STEP 2 Toss together the grated and squeezed zucchini, desiccated coconut, and melted butter.

STEP 3 Beat the eggs, then add the vanilla.

STEP 4 Add the zucchini and dry ingredients slowly.

STEP 5 Fold in the chocolate chips.

STEP 6 Transfer the batter to a muffin tin and bake!
