Easter Cupcakes

INGREDIENTS - cake flour - sugar - baking soda - baking powder - salt - butter - eggs - Greek yogurt - oil - vanilla - whole milk - carrot curd

STEP 1 In a large bowl, combine the sugar, cake flour, baking powder, baking soda, and salt. Add the softened butter and combine.

STEP 2 In a separate bowl, combine the eggs, greek yogurt, oil, and vanilla extract.

STEP 3 Combine the wet and dry ingredients, then add the milk.

STEP 4 Place eggshells in a mini muffin pan and fill halfway with batter, then bake.

STEP 5 Using a toothpick, wiggle a hole into each cake, then fill with carrot curd.
