Corn Cupcakes

INGREDIENTS - cake flour - salt - baking soda & powder - butter - sugar - sour cream - eggs - oil - fresh corn - blackberries - powdered sugar

STEP 1 Combine dry ingredients and set aside.

STEP 2 Cream together the butter and sugar. Stir in the sour cream, eggs, and oil. Add the dry ingredients and mix.

STEP 3 Stir in the corn, fill cupcake liners, and bake!

STEP 4 Heat the corn puree until it forms a paste and set aside. Do the same for the blackberries.

STEP 5 Beat the butter, corn paste, and powdered sugar. Paint stripes of blackberry in a piping bag, then add the corn frosting. Frost the cupcakes!
