What's your go-to quick dessert for busy nights or surprise guests? This vegan banana pudding is perfect for those days you need a dessert but you can't be bothered to turn on the oven and bake! It only requires a handful of ingredients, and as long as you have vegan vanilla wafers and a chilled can of coconut whipping cream, it comes together very quickly!

What makes this banana pudding so quick and easy to make?
Nature's Charm came out with coconut custard that you can use this straight out of the can! It's so creamy and not too sweet, which I love.
Although the vanilla wafers and bananas are already quite sweet, if you'd like to sweeten it up, I would add maple syrup or powdered sugar to the coconut whipping cream!
You can eat this banana pudding right away or you could keep it in the fridge. Right after you assemble this quick banana pudding, the cookies are crunchy, adding a nice textural element to the creamy dessert.
After a few hours in the fridge, the cookies soak up the moisture and turn soft. Either way, it's delicious!
Vegan Banana Pudding
Ingredients
- 18 vegan vanilla wafers or as many as you like!
- 14 oz Nature's Charm coconut custard
- 13.5 fl oz Nature's Charm coconut whipping cream chilled overnight
- sweetener of choice optional
- 4 bananas
- 1-2 tablespoons lemon juice
Instructions
- Pour the chilled whipping cream in a large bowl (freeze the bowl for best results) and whip. Once it's creamy, add your favorite sweetener and continue to whip until stiff peaks form.
- Slice the bananas and toss them in some lemon juice to stop them from browning.
- In a jar, add a tablespoon of coconut custard followed by a tablespoon of whipped cream.
- Add a layer of lightly crushed nilla wafers (I used 1½ wafer per layer) and a layer of sliced bananas.
- Repeat the layers one more time - custard, whipped cream, wafers, banana. Top with a final layer of custard, a dollop of whipped cream, and garnish with a whole wafer and a slice of banana.
- Repeat with the other jars.
Nutrition
Are Nilla wafers vegan?
No. Although Nilla wafers are the classic cookie in banana puddings, Nabisco nilla wafers contain eggs and whey, making them non-vegan. They also contain high fructose corn syrup and artificial flavoring... No thanks.
If you can't find vegan Nilla wafers at your local store, you can check out some recipes online. I used this one and it was delicious!
