Pasta with Roasted Tomatoes and Vegan Calamari
This is one of the easiest pasta dishes ever! Difficult to beat 30 minutes of not-very-active cooking time when it ends with a delicious and comforting plate of spaghetti! Or any other pasta of your choice! I personally like the texture of classic spaghetti in this dish, but use what you like or have in your pantry!
How to make roasted tomato sauce
Slice the cherry tomatoes in half and place them on a baking sheet. You can use any cherry tomato you like! I think it would look quite pretty if you mixed the colors of the tomatoes, using yellow, red, green, and black.
Drain and rinse the vegan calamari and add that to the baking sheet. Peel and crush the garlic cloves and scatter them on the baking sheet. 6 cloves of garlic sounds like a lot, and feel free to not use as many if you're not a big garlic lover, but it adds so much flavor! Add the herbs, salt, pepper, olive oil, and toss so everything is coated.
Put the baking sheet into a preheated oven and roast for 30 minutes while you boil a pot of water and cook the pasta!
Dried herbs vs. Fresh herbs
Use what you have! I've tried both, and both come out tasty! If you only have dried basil and oregano, use that. If you have access to fresh herbs, use that. If you're using fresh herbs, roast the oregano with the tomatoes, but add the basil to the sauce after it comes out of the oven.
Can I make this pasta with roasted tomatoes gluten-free?
Absolutely! The sauce doesn't contain any gluten, so all you have to do is use gluten-free pasta, which is exactly what I did!
Whether you use regular, gluten-free, long or short cut pasta, this is going to be delicious!
Top it with some vegan parmesan and a pinch of crushed red pepper and you're golden! You can easily make vegan parm by combining roasted cashews, salt, and nutritional yeast in a mortar and pestle (or food processor if you're making a large amount) until it forms a delicious cheese-like dust. I just eyeballed the amounts of the ingredients to be honest, just tasting and adjusting until I got the flavor I wanted.

Pasta with Roasted Tomatoes and Vegan Calamari
Ingredients
- 12oz / 340g spaghetti
- 3 tablespoons olive oil
- 1½lbs / 680g cherry tomatoes
- 1 can Nature's Charm vegan calamari
- 6 cloves garlic, crushed
- ½ teaspoon fine sea salt
- ¼ teaspoon black pepper
- ½ teaspoon dried basil*
- ¼ teaspoon dried oregano*
- vegan parmesan (optional)
- crushed red pepper (optional)
Instructions
- Preheat the oven to 425°F/220°C. Put a pot of water on the heat.
- Slice the cherry tomatoes in half and place them on a baking sheet. Drain and rinse the vegan calamari and add it to the baking sheet along with the garlic. Add the olive oil, herbs, salt, pepper, and toss to coat evenly.
- Put the baking sheet into a preheated oven and roast for 30 minutes while you boil a pot of water and cook the pasta!
- 10 minutes before the tomatoes finish roasting in the oven, salt the boiling water and add the pasta. Cook according to package instructions.
- Drain the pasta and put it back in the pot along with the roasted tomatoes and vegan calamari. Toss until all the pasta is coated with sauce. Serve immediately.
